Do Darker Roasts Have More Caffeine? No — Here's Why

The myth is that bolder means stronger. Caffeine barely notices the roast — what changes is how you are measuring it.

Do darker roasts have more caffeine? It is the single most common question we get at markets, and the answer is no — not in any way that will change your morning. Dark roast tastes stronger, and people reasonably assume strong flavour means strong coffee. Those are two different things.

Here is what actually happens to caffeine during a roast, and what to do if you genuinely want a bigger jolt.

Caffeine survives roasting almost untouched

Caffeine is a stubborn molecule. It sublimes at around 178°C, but inside a coffee bean it is bound up in the cellular structure and does not meaningfully escape at the temperatures and durations we roast at. A bean that goes into the drum with a certain amount of caffeine comes out with very nearly the same amount, whether we pull it at first crack or take it to second.

So per bean, light and dark are effectively tied.

That is the whole answer. Everything else is a measurement problem.

Why the scoop and the scale disagree

Roasting removes water and burns off some organic matter. A bean that goes darker loses more mass and expands more, which means it gets lighter and larger. That one fact produces two contradictory-sounding truths:

  • Measured by weight, dark roast has marginally more caffeine. Each bean weighs less, so 20 grams of dark roast contains more individual beans, and therefore a bit more caffeine, than 20 grams of light roast.
  • Measured by volume, light roast has more. A denser light-roast bean packs tighter, so a level scoop holds more coffee mass and more caffeine than the same scoop of puffed-up dark roast.

Both statements get quoted online as if they settle the argument. They describe the same physics from two directions.

The size of the effect is small — think single-digit percentages, not double. It is dwarfed by how much coffee you use and how you brew it.

What actually drives caffeine in your cup

If you want more caffeine, four things matter far more than roast level:

  1. Dose. The coffee-to-water ratio is the biggest lever by a wide margin. Going from 55 g/L to 70 g/L changes your caffeine more than any roast choice ever will.
  2. Brew method. Immersion methods like French press and long-contact filter brews extract more caffeine than a fast espresso shot. A double espresso has roughly 60–100 mg; a 12 oz filter coffee is commonly 150–200 mg.
  3. Species. Robusta carries roughly twice the caffeine of arabica. Almost all speciality coffee, ours included, is arabica. If a coffee is unusually caffeinated it is usually because robusta is in the blend.
  4. Grind and time. Finer grind and longer contact pull more of everything, caffeine included.

Roast level is item five at best.

So why does dark roast taste stronger?

Because “strong” in everyday speech means bitter and roasty, not caffeinated. Dark roast has broken down most of its origin acidity and built up bittersweet compounds from the roast itself. It tastes bolder. Your tongue reads that as power and your brain fills in the caffeine.

Blind-tested by weight, a light roast brewed at the same ratio will often deliver marginally less caffeine while tasting considerably brighter and more delicate. People routinely describe it as “weaker.”

The practical advice

Weigh your coffee. That single change removes the entire scoop-versus-scale problem, makes your brewing repeatable, and lets you actually adjust caffeine on purpose. A cheap kitchen scale is the highest-return coffee purchase most people can make.

A reasonable starting point for filter coffee is 60 grams of coffee per litre of water — about 18 grams for a 300 ml mug. If you want more caffeine, go to 20 or 22 grams and grind slightly coarser so it does not turn bitter.

If you want less caffeine without switching to decaf, drop your dose and brew a slightly longer, gentler extraction. You will keep most of the flavour.

What we roast for

We do not roast dark to make coffee stronger, because it does not. We roast to the point where a specific lot tastes like the best version of itself — which for a washed Ethiopian is early, and for a natural Brazilian is quite a bit later.

Quick answers

Does espresso have more caffeine than filter? Per millilitre, yes. Per serving, usually no — a mug of filter coffee typically beats a double espresso.

Does decaf have zero caffeine? No. Decaffeinated coffee retains roughly 1–2% of its original caffeine, so a cup lands around 2–5 mg.

Will a darker roast keep me up longer? Not because of the roast. If it does, look at your dose and your brew time.

Is there a “high caffeine” arabica? Not meaningfully. Marketing claims about extra-caffeinated coffee almost always come down to robusta content, a higher dose, or both.

The honest summary: roast level changes flavour dramatically and caffeine barely at all. Buy the roast you like drinking, weigh your dose, and adjust from there.
